The Ethiopian harvest we buy from arrived three weeks later than usual this year, which meant a nervous fortnight of drinking the last of the old crop slowly. It was worth the wait: the new lot is washed rather than natural-processed for the first time, and the peach note we sell Norte on has come through even clearer.

We roasted six trial batches before settling on a profile a shade lighter than last year's. If you bought a bag in July, this one will taste different: better, we think, but different.

A third roasting day, for the rest of the summer

We are adding Mondays to the roast schedule until September, because Tuesday's batch keeps selling out by Thursday lunchtime.

Roasting to order twice a week is the whole point of this place, but it only works if 'to order' does not mean 'out of stock.' Through August and September we are roasting on Mondays as well as Tuesdays and Fridays, which means fresher coffee lands on more days and the subscription never slips.

This is a summer measure, not a permanent change. If it stays this busy into autumn, we will make it permanent: and say so here first.

Our first wholesale account in Liverpool is serving Serra as its house espresso, starting this week.

We turned down wholesale enquiries for years because two people and one roaster cannot supply a shop and keep the shop stall running. A bigger drum changed the maths, so Bold Street Coffee House on Bold Street is now pulling Serra as its house shot: the first café pour of ours in the city.

Every bag is compostable now, not just the new ones

The switch to compostable bags is finished across all four coffees, including the ones already on the shelf.

We started moving to compostable packaging in the spring and the last of the old foil-lined bags went out in June. Every bag we post now breaks down at home, not just in an industrial facility, and the valve still works the same way it always did.

It cost more per bag than the old ones. We have not put that on the price, and do not plan to.

A Saturday cupping, open to anyone who wants a seat

We are running a public cupping on the last Saturday of the month: five coffees, no charge, ten seats.

Cupping is how we decide what to buy and what to roast, and we do it most mornings anyway, so once a month we are opening the table. Five coffees, unlabelled until the end, and a short explanation of what we are listening for in each cup.

Ten seats, first come first served on the Saturday. Turn up at ten; there is coffee on the brew bar either way.

Skip a round without pausing the whole subscription

Every subscription email now has a "skip this one" link, for the weeks the cupboard is already full.

Pausing a subscription meant emailing us and hoping we saw it before the next roast. The link in every confirmation email now does the same job in one click: skip the coming delivery, keep the plan running, and it starts again next time without anyone having to remember to restart it.

It works for any of the three plans, on any bag size, and there is still no account to log into.
