Vinho verde, Loureiro
Príncipe Real · Lisboa
Twenty-two covers, a single service, and a menu that changes when the market does. We open the book sixty days ahead and it tends to go in an afternoon.
The kitchen
There is no à la carte and there never has been. Twenty-two people sit down at seven, the same seven courses arrive for everyone, and one of us comes out between the fourth and the fifth to say where it all came from.
The room is small on purpose. It is the only way to cook this way without either the food or the service going.
The room
A converted tasca on Rua da Escola Politécnica. Nothing about it is grand, which is the point: the money went into the produce and the people, and you can tell.
